Join us for a very special hog butchering demonstration and tasting dinner co-hosted with North Woods Ranch’s owner, Oliver Griswold.
In 2010, Oliver founded North Woods Ranch just outside of Warrandale (approximately 30 minutes north of Pittsburgh) after a successful career as an engineer. On his ranch, Oliver practices restorative agriculture, seeks to foster biodiversity, and creates habitat where his animals can co-exist with wildlife. Oliver’s animals–including the hog we will be butchering during this demonstration–live the good life, being raised with kindness, pastured, and given non-soy, non-GMO feed a stone’s throw from Oliver’s family home where he lives with his wife and three children.
Oliver will augment Butcher Steve during the butchery demonstration where which they will both discuss how Oliver’s dedication to beyond-organic, sustainable agriculture makes a difference to us at the end of the farm-to-fork value stream and to the regional food system.
Following the demonstration, enjoy a flavorful, five course tasting dinner prepared by Marty’s culinary team: Chef Matt, Butcher Steve, and Baker Andrew.
